Roasted Vegetable-Skewers

Hello kids. When it comes to vegetables I know they are not directly on the top on your favorite-food list, haha.
I hope we can change that.
Have you ever had roasted vegetables? They are super yummy and easy to make. In this recipe we made them into skewers. Take a look; I know you will love it. 🙂

  • Prep: 20 mins
  • Cook: 25 mins
  • Yields: 2 skewers

Directions

1Today's vegetable skewers will have yellow squash, zucchini and red onion. Please make sure to always wash and dry the vegetables you will be working with. You don't need to wash the onion. By peeling the dry skin and removing one more layers the onion is clean. You also need two 6-inch wooden skewers. Preheat the oven to 350 degrees Fahrenheit. (Please ask an adult to help you with that).

2Prep the veggies on a cutting board. Cut the squash and zucchini into slices, about 1-inch thick. Cut the onion in half and then in half again (see picture). Peel apart the layers to get small square-shaped pieces.

3Now you can build your skewers. It doesn't matter what comes first or last. It's your creation.

4Put the skewers aside and prep your next items.

5In a small bowl put together the oil, oregano, basil, salt, black pepper, and the lemon juice...

6...and mix it all together with a spoon.

7With a pastry brush cover the skewers all around with the oil-herb mixture...

8...and place them on a small baking tray. (NOTE: Spray some non-stick spray on the tray before you put the skewers on it). Put the tray in the oven and set the timer to 25 minutes.

9When the buzzer goes off your vegetable skewers are done. Enjoy your dinner.

Ingredients

1 medium-sized zucchini

1 medium-sized yellow squash

1 small red onion

2 six-inch wooden skewers

2 tbsp olive oil

1/4 tsp dried oregano

1/4 tsp dried basil

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp lemon juice

TOOLS

1 cutting board + knife

1 small mixing bowl

1 pastry brush

1 small baking tray

ADDITIONAL RECIPE NOTES:

To get a more even color while baking you can take out the baking tray after 12 minutes and carefully turn the skewers around (top to bottom) and then put them back into the oven for the remaining 12 minutes.

When making vegetable skewers please make sure the vegetables you pick have about the same consistency so you won't have some vegetables done and the others still raw.

If you don't like to make skewers you could just mix the veggies in the oil-herb mixture and roast your vegetables on the baking tray.
